ALL MEALS COME WITH 2 VEGETABLE CHOICES, 2 DESSERT CHOICES, & A SALAD

CHICKEN ENTREE MENU IDEAS

  • COQ AU VIN: Chicken, mushrooms, carrots, pearl onions, small amount of bacon, fresh herbs & garlic with a burgundy sauce
  • CHICKEN PARISIAN: Chicken breast layered with goat cheese & sun dried tomatoes (or Swiss & sliced fresh tomatoes)
  • CHICKEN SALTIMBOCCA: Chicken breast dredged & sautéed, topped with sautéed shallots & spinach, and melted Swiss or fontina cheese
  • LEMON THYME CHICKEN ROLLS: filled with marinated and cooked shiitake mushrooms, rolled and baked, served with mushroom reduction sauce
  • LEMON ROSEMARY CHICKEN BREASTS: Chicken Breasts baked with paprika and fresh rosemary, topped with a reduction wine sauce
  • FRAGRANT CHICKEN: Saffron, golden raisins, orange slices, capers, turmeric, this one has Spanish overtones
  • BRIE-ON STUFFED CHICKEN BREASTS: Brie & caramelized onion stuffed chicken breasts with a sage & garlic wine sauce

SEAFOOD ENTREE MENU IDEAS

  • TUNA/ SWORDFISH/ OR MAHI MAHI “SQUEEZE”: Fish is marinated in a mixture of freshly squeezed juices and broiled, topped with reduced “squeeze” sauce.
  • SALMON WITH MUSTARD AND APPLES: “Pink fish under a blanket of apples surrounded by a Piquant mustard sauce… this one is good for fall & winter especially!
  • SALMON & PEPPER MEDLEY OVER PASTA: Red and green and yellow peppers with green pepper corns with a light Béchamel sauce
  • GRILLED SALMON W/ FRESH TOMATO CONCASSE: with a Mediterranean flair, tomatoes, onion, & red wine, topped off with Basil pesto

Depending on your dinner choices we can add 2 or 3 passed or stationary appetizers for your guests to enjoy while having a beverage before the meal.
